Water temperature for green teas:
Japanese green tea and Chinese spring green teas should be 160 degrees to 170. Bring the water to a boil, then let it rest for 5 minutes before pouring into your teapot or cup. Add the precious leaves and allow them to steep slowly.
Standard green teas love a temperature of 170 degrees to 180. The steam is rising from the kettle. Or bring the kettle to a boil, then let it rest for 3 minutes.
Steep all green teas to your own personal taste.
When using an infuser, remove when it tastes just right and re-steep. You can get multiple cups from the same leaves!
